The common name for Chickweed (Stellaria media) comes from the old custom of using the seeds as bird feed. It is a mild herb that isvery nutritious, providing large amounts of protein and minerals. Native to Europe, but found throughout the temperate regions of North America, Chickweed is very common because it blooms as early as March and continues blooming throughout the summer. The best way to make a good tasting cup of tea is by the infusion method. Place one tea bag into a cup and add no more than 6 oz. of boiling water. Let steep for 3 minutes and remove the bag. Press the bag before removing to enhance the flavor. Add honey to sweeten.
